- large platter
- quarter sheet
- aluminum foil
- baking sheet rack
Ingredients
Staples
- kosher salt
- pepper
To Buy
- 1-2lb chicken “wings”
Prep
Brine
- Add 0.5C kosher salt to 2qt water in large bowl and dissolve
- Add wings
- Store for 5-6 hours in fridge
Cook
- Heat oven to 450°F
- Line half sheet with foil, add rack
- Transfer wings from brine to platter
- Add salt and pepper to wings
- Microwave at full power for 3 minutes
- Flip wings over
- Salt and pepper again
- Microwave at full power for another 2 minutes
- Transfer wings to wire rack and place in oven
- Reduce oven to 350°F
- Cook 40 minutes
- Remove wings, flip, and return to oven for another 20 minus or until golden brown
- Toss with buffalo sauce and serve
